Halibut Olympia

Halibut Olympia

Submitted by Eleanor Batson.

Halibut Olympia – straight from my family who live up in Anchorage , AK!

  • 4 Halibut filets (or any other MILD fish)
  • 3 T. lemon juice

Sauce

  • 1/2 cup freshly grated parmesan cheese
  • 3 T. Mayo (I use light mayo – tastes great)
  • 1/4 cup softened butter
  • 3 T. chopped green onions chopped fine (I used half as much – still delish)
  • 1/4 t. salt
  • 1/2 t. prepared mustard
  • dash of Tabasco

If you are serving this over noodles – double the “sauce”…

Use enough halibut for one layer in a 9X13 pan.  Place Halibut in buttered
pan.  Sprinkle with lemon juice and broil 4 inches from flame for 5-8
minutes, until almost done.  Mix remaining ingredients, remove halibut from
broiler and spread mixture over top.  Return to broiler for 2-3 minutes or
until it is brown and bubbly.

Serve this over a bed of spaghetti or sea shell noodles with lots of sauce
– sooo good!
