Halibut Olympia

Halibut Olympia – straight from my family who live up in Anchorage , AK!
- 4 Halibut filets (or any other MILD fish)
- 3 T. lemon juice
Sauce
- 1/2 cup freshly grated parmesan cheese
- 3 T. Mayo (I use light mayo – tastes great)
- 1/4 cup softened butter
- 3 T. chopped green onions chopped fine (I used half as much – still delish)
- 1/4 t. salt
- 1/2 t. prepared mustard
- dash of Tabasco
If you are serving this over noodles – double the “sauce”…
Use enough halibut for one layer in a 9X13 pan. Place Halibut in buttered
pan. Sprinkle with lemon juice and broil 4 inches from flame for 5-8
minutes, until almost done. Mix remaining ingredients, remove halibut from
broiler and spread mixture over top. Return to broiler for 2-3 minutes or
until it is brown and bubbly.
Serve this over a bed of spaghetti or sea shell noodles with lots of sauce
– sooo good!
