Kumquat Refrigerator Pie

  • 1 8oz tub whipped topping
  • 1 cup (or a little more) kumquats - seeded and pureed
  • 1 can sweetened condensed milk
  • ½ cup lemon or lime juice
  1. Get a 9 inch pie crust ready to go. If using a traditional pie crust, pre-bake it. Graham cracker crusts work well too.
  2. Beat condensed milk and whipped topping until thickened. Add lemon or lime juice and beat some more. Fold in the kumquats.
  3. Pour in the pie shell.
  4. Chill several hours.
  5. Garnish with thin slices of kumquats.
  6. Enjoy!
