Israeli Chopped Salad Recipe

Ingredients
  • 3 medium cucumbers, seeded and chopped
  • 4 medium ripe tomatoes, cored, seeded, and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 large sweet yellow onion, finely chopped
  • 3 cloves of garlic, minced
  • 5 scallions, finely chopped
  • 2 jalapeƱo peppers, seeded and minced
  • ¼ cup cilantro, finely chopped
  • ¼ cup parsley, finely chopped
  • ¼ cup mint, finely chopped
  • ½ cup extra virgin olive oil
  • The juice and zest of 3 lemons
  • 2 teaspoons sumac
  • 1 teaspoon cinnamon
  • Kosher salt and freshly cracked black pepper, to taste
Instructions
  1. Mix all the ingredients in a large glass bowl. Cover with plastic wrap and allow to chill in refrigerator for at least 30 minutes before serving.
