Frijoles Volteados Recipe from Guatemala, and CRS Rice Bowl

Serves: 4 to 6
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1-2 Tbsp Fair Trade olive oil
  • 2 cans black beans, with liquid reserved
  • Salt to taste
  • Flour tortillas
  • Fried egg (optional)
  1. Sauté onions and garlic in oil until tender.
  2. Puree beans in a blender with about ⅔ cup liquid until they become a smooth paste.
  3. Add blended black beans to onions.
  4. Stir over medium heat until thick, about ten minutes.
  5. Serve over tortillas or with a fried egg or rice.
