I came across a blog post this morning, and I just have to share it with you!
It was written by Manny Augello, the Executive Sous Chef at Jolie’s Louisiana Bistro in Lafayette, Louisiana. He also publishes a blog called Hunt 2 Table. Very cool. The concept is brilliant. Manny describes it in this way:
My obsession- to find how things work and why. Finding the freshest possible ingredient and recreating a better product of all that can be found mass-produced and tucked on some store shelf. I want to put myself in the shoes of the average home cook and source how to find all that we enjoy, at its best and unspoiled.
In turn, I hope this will in some strange way inspire you to reach out of your comfort zone and stand up for yourself before forking over a weeks’ salary on food you believe to be “a good product”. Then there is that whole thing about further expressing your own skills in the kitchen.
