Zatarain's Jambalaya Throwdown

I admit it.

I've never used Zatarain's Jambalaya Mix.

Now, it's not that I have anything against Zatarain's. I just like to make it up myself. Not to mention the fact that boxed and canned foods tend to have all kinds of nasty ingredients. Like MSG. And enough sodium to preserve an Egyptian mummy for another couple of thousand years.

Fresh Salsa

I've been thinking about Mexican food ever since I got back from the CNMC in San Antonio. And I had Mexican food three times while I was there! Actually, it was authentic Tex-Mex.

Two days ago I made tacos for dinner. Anytime we make tacos, we always make fresh salsa. We have a recipe that we use every time, and it's good.

Tabouli or Tabouleh?

 

No matter how you spell it, it is still the same yummy goodness of tomatoes, parsley, mint, bulgar wheat, onions, green onions, olive oil and lemon juice.

And it is oh-so-good!

I am sorry to say that this is one of those recipes that I cannot share.

It's a family secret.

But I can tell you what is in it. As a matter of fact, I already have... just a few lines up. We also add kosher salt and cayenne. Can't tell you how much though....

Another King Cake

This is the king cake that I made about a month ago for my oldest daughter's birthday.

Tomorrow is Lundi Gras and I will spend the afternoon making another king cake. This one will be for the party we are going to on Mardi Gras afternoon.
